Bitter gourd – 7-8, Onion – 2, Asafoetida – 1 pinch, Turmeric – 1 pinch, Green chilli – 1-2, Mustard oil – 3 tbsp, Garam masala – 1/4 tsp, Dry mango powder – 1/2 tsp Salt – as per taste, Tamarind water – half cup

50 grams peanuts, 2 red chillies, 2 teaspoons gram dal, dry coriander – 2 tablespoons, 2 teaspoons black urad dal, half teaspoon fenugreek, cumin – 1 teaspoon, coriander powder – 1 teaspoon
How to make bitter gourd curry

First step: First of all cut the bitter gourd into round shape and throw away the seeds. Salt removes bitterness, so add 1 teaspoon salt to bitter gourd and keep it covered. After some time you will see that it will be filled with water due to salt. Now squeeze out the water from the bitter gourd and wash it with clean water and then keep it in another vessel. Now, fry the bitter gourd on low flame. When the bitter gourd is roasted, take it out in another vessel.

Second step: Now we will prepare the masala. Roast 50 grams peanuts on a hot pan. After that, take 2 red chillies, 2 spoons of gram dal, dry coriander – 2 tbsp, 2 spoons of black urad dal, half spoon of fenugreek, cumin – 1 tsp, coriander powder – 1 tsp and put them in a hot pan and roast them well. Will give. When the roast is done, put these spices in a grinder jar, grind them finely and put these spices in a big vessel.

Third step: Now add mustard seeds, cumin seeds, red chilli and asafoetida in 2 spoons of oil in the pan. When it turns brown, add chopped onion to it. When the onion turns red then add the roasted bitter gourd. When onion and bitter gourd mix well then we will add prepared masala in it. After some time we will add turmeric, ginger and garlic paste. We will keep stirring the vegetable for 2 minutes, now we will add salt as per taste, 2 glasses of water and half cup of tamarind water and let the vegetable cook. After 5 minutes your bitter gourd curry will be ready. You can eat it with rice and roti.
